Healthy Desserts: Cottage Cheese or Yogurt Mousse with Fruit7/09/2015
I am really loving this healthy snack this summer - it is a fresh and delicious cold treat! The best part of it is, this is a completely guilt free dessert. If you are trying to lose weight or change your eating habits, this is the recipe for you!
I kinda made up this recipe one day when I really wanted to eat a slice of cheese cake but I was on a diet, so I couldn´t. My sweet tooth didn´t stop there - I was determined to make something delicious. After years of cooking and baking I have the general idea of which ingredients mix well together, so I decided to use the ones I had at home that day. I had cottage cheese, pineapple compote and a few packets of unflavoured gelatin. I mixed the cottage cheese with pineapple juice from compote and 1 packet of unflavoured gelatin. I poured the mixture in a bowl, added the pineapple slices and put the dessert in the fridge for an hour or two. Voila - Yummy Healthy Snack!
So today I decided on adding mixed fresh fruits and pour some jello on top of the fruit, so that it stays fresh longer. Also, I had one blueberry yogurt left which would expire in a few days, so I made another mixture with it and I love it! You can really use whichever flavour you love best.
Oh, because I had some pineapple jello left, I pour it over fresh fruit slices just because. I hate waisting perfectly good food, so I use everything that is usable :)
If you want to make this healthy dessert more cake-like for your guests, pour the mixture on top of two crushed biscuits or cookies! They will get really soft and go perfectly with the yogurt or cottage cheese creme and fruits. The best part is - you will not be baking at all! :)
