This recipe is not a healthy one, for a change. But we threw a birthday party for a family member and baked refreshing lemon cupcakes aka lemon tarts. And they were awesome! :)
Here is the recipe for Cookie Lemon Tarts, thanks to Inquiring Chef! I loved their pictures and I love the fact that they published the recipe with grams and not only cups. I have never used cups as measuring tool.
Crust:
115g unsalted butter, softened
100g granulated sugar
1 egg
190g all-purpose flour
scant ¼ teaspoon baking powder
pinch salt
Lemon Filling:
2 eggs
3 egg yolks
150 ml whipping cream
juice from 1 large lemon
100g granulated sugar
Topping:
4 tablespoons powdered sugar, divided
150ml whipping cream
1. Beat the butter and granulated sugar until it is fluffy. Add the egg and mix on medium until fully incorporated. Add the flour, baking powder, and salt all at once and mix on medium just until no spots of flour remain, about 20 seconds (do not over mix). Wrap the dough in parchment paper and refrigerate for 30 minutes.
2. Heat the oven to 180°C and make the lemon filling by whisking together the eggs, egg yolks, whipping cream, lemon juice, and granulated sugar until smooth.
3. Take the dough from the refrigerator and make little cups in a muffin tin from it. Pour the lemon filling into the centre of each sugar cookie cup.Bake for 10-12 minutes and let them cool of before adding the topping. Serve chilled.
